Mini Quiche with Bacon and Spinach

A small bite packed with flavor and endless filling possibilities.
These mini quiches are delicious, a total hit here at home.
You know that basic pie dough?
We'll use it as the base for the quiches.

The filling can be whatever you like: vegetables, bacon, sausage, chicken, salami, cherry tomatoes, zucchini, spinach, and so on.
Today we'll use what we had in the fridge, and it'll make a delicious breakfast or snack (it also works as lunch, especially if it's to go).

Once the dough is ready, just use your creativity for the filling and enjoy the recipe.
Ingredients
- 1 pre-made pie dough disc
- 6 eggs
- Half an onion, chopped
- 150g (5 oz) bacon
- Shredded cheese, to taste
- Salt and pepper
- 1 cup chopped spinach with green onion
Method
- 1
Chop and fry the bacon, adding the onion at the end so it doesn't burn.
- 2
Set aside, then in a bowl beat the eggs and add salt and pepper.

- 3
Add the chopped spinach and green onion and mix. Set aside.

- 4
Roll out the pie dough disc very thin, but not so much that it becomes see-through — it still needs some structure.

- 5
Using a wide-mouthed cup or glass, cut out 12 circles of dough.

- 6
Place each circle into a muffin tin cavity and press with your fingers to fit it in well.

- 7
Using an ice cream scoop, add the filling to each cavity. You can fill them almost to the top.

- 8
On top, add the shredded cheese.

- 9
Bake in a preheated oven at 375°F (190°C) until golden and puffed up (about 30 minutes).
