Banana Muffins with Sourdough Starter (optional)

A banana recipe without the strong banana taste that usually puts a lot of people off.
After trying this recipe, bananas never go to waste again — they won't get thrown out, and even people who don't like bananas will love these muffins.

Muffins in general are loved here at home — I love making them, the family loves eating them, they're cute and fluffy, and practical to pack in the kids' lunchboxes or for a picnic at the park. We eat them for breakfast and snacks whenever we have some ready.
This recipe is for anyone who doesn't want or can't have much sugar, since the main sweetener here is the bananas — so the riper, the better, the sweeter.
If you don't want to use sourdough starter, or don't have any on hand but still want to try the recipe, just leave it out.
Ingredients
- 300g (about 2 1/2 cups) very ripe peeled bananas
- 1/4 cup melted coconut oil
- 2 large eggs
- 1/4 cup brown sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1 1/4 cups all-purpose flour
- 1/3 cup active or unfed sourdough starter (optional)
- 1/5 cup semisweet chocolate chips (or add to taste)
Method
- 1
Peel and mash the bananas well.

- 2
Add all the wet ingredients and the sugar, and mix well.

- 3
Next, add the dry ingredients (flour, salt, baking soda, and cinnamon). Mix well.

- 4
Add the sourdough starter and mix. (optional)
- 5
Lastly, fold in the semisweet chocolate chips with a spatula or spoon.

- 6
Let it rest for at least 30 minutes if you're using the sourdough version, or leave it longer in the fridge until you're ready to bake (let it come back to room temperature before baking).
- 7
Use an ice cream scoop to portion the batter into each muffin cup, filling almost to the top.

- 8
Bake at medium temperature, 190°C (375°F), until golden and puffed up, or until a toothpick comes out clean.
- 9
Unmold and let cool on a wire rack.

Tips: Keep peeled overripe bananas in the freezer, so whenever you want to make this recipe you just thaw and use them, even if you don't have ripe bananas on hand. Mash the bananas very well so there are no chunks left — that's usually what people find unpleasant in banana recipes. It'll be easier to please everyone.
